Make Your Own Multi-Touch Screen Using a Rear-Projection Television

Instructables has a great how-to on making your own multi-touch screen for cheap using the rear projection television you may already own!

The technology behind it is, of course, frustrated total internal reflection. Long story short, the computer KNOWS where your fingers are because of the way infrared light bounces off of them when you touch the screen.
